3-Ingredient Energy Balls
The perfect snack for a busy day! These energy balls are simple to make, packed with natural sweetness, and surprisingly delicious. Stash a few in your bag for an on-the-go boost, or share with friends and family to spread good nutrition all around!
Ingredients
- 1 cup chopped Medjool dates
- 2/3 cup rolled oats
- 1/3 cup no-sugar-added peanut butter
Instructions
- Soak the chopped dates in a bowl of hot water for 10 minutes, then drain well.
- Add the dates, oats, and peanut butter to a food processor. Blend until the mixture is well combined and starts to stick together.
- Roll into 16 bite-sized balls.
- Get creative with toppings! Roll your energy balls in shredded coconut, finely chopped nuts, cocoa powder, matcha powder, or chia seeds for extra flavor and texture.
